About the Valley

Welcome to the April 2007 issue. This issue includes a big event in Townsend and some upcoming events in Knoxville and the nearby town of Oak Ridge.


Townsend
15th Annual Townsend in the Smokies Spring Festival & Old Timers Day

Plan to visit Townsend during the 15th Annual Townsend in the Smokies Spring Festival & Old Timers Day from April 27 through May 5, 2007. The festival is located at the Townsend Visitors Center and will celebrate the unique culture of the Smoky Mountains.
Activities include enjoying bluegrass music and clogging, arts and crafts displays and demonstrations, storytelling, and nature and wildflower programs. A barbecue cook-off will be held during the last weekend of the festival, May 4 and 5.

Knoxville 2007 Honda Hoot

Knoxville will be host to the 2007 Honda Hoot Rally, June 20-24. This event is not only one of the largest Tennessee motorcycle rallies, but it is also one of the best Honda motorcycle rallies. The Knoxville Honda Hoot, which expects more than 15,000 attendees, is on the 2007 Lightning Customs Major Motorcycle Rallies List.

Do You Like History?

You should plan to visit the Secret City Festival in the nearby town of Oak Ridge, Tennessee, on June 15-16, 2007. This town, which was born in 1942 during World War II, was a truly “secret city” for 7 years. It was not shown on any maps, allowed visitors only by special approval, and residents had to wear badges at all times. Oak Ridge was home to the Manhattan Project, created to help develop an atomic weapon. Today, Oak Ridge is a thriving town in East Tennessee.

A GREAT SALAD RECIPE

Cracker Salad is one of my family’s favorite dishes. Here are two delicious variations of the saltine cracker salad:


Cracker Salad


12 ounces saltine crackers (3 stacks)
3 tomatoes—peeled, seeded, and diced
1 onion, finely diced
1 green pepper, diced
1 (8-ounce) package sharp Cheddar cheese, shredded
1/2 cup mayonnaise or as needed

Break crackers in a bowl. Add tomatoes, onion, green pepper, and cheddar cheese. Stir in mayonnaise. Add salt and pepper to taste. Chill before serving.

Georgia Cracker Salad


1 (4-ounce) packet saltine crackers (1 stack)
1 large tomato, chopped
3 green onions, finely chopped
1 hard-cooked egg, chopped
1/4 cup mayonnaise or as needed
Salt and pepper to taste

Coarsely crumble the saltines in a medium bowl. Mix in the tomato, onions, and mayonnaise. Stir in hard-cooked egg and season with salt and pepper. Chill.
