HEARTY ZUCCHINI SOUP
This is a great recipe for cold winter days!
1 pound ground beef or hot Italian sausage
2 celery ribs, thinly sliced
1/3 cup chopped onion
1 chopped bell pepper
1 can (28 ounces) diced tomatoes, undrained
5 medium zucchini, cubed or sliced
4 cups water
1 Italian salad dressing envelop
1 teaspoon salt
4 teaspoons beef bouillon granules
½ teaspoon sugar
Shredded Parmesan cheese, optional
In a large soup pot, cook meat, celery, onion, and bell pepper over medium heat until meat is no longer pink and veggies are tender. Drain if needed. Stir in the tomatoes, zucchini, water, Italian seasoning, salt, bouillon, and sugar. Bring to a boil. Reduce heat, cover, and simmer for 25 to 30 minutes or until zucchini is tender.
